[ベトナム料理] Banh bot loc, vietnamese steamed tapioca flour cake
Since my friend made "banh bot loc" last weekend and share it to me on instagram, I will introduce it today.
In the history of Vietnam, Hue is an old capital of Vietnam, under Nguyen dynasty (阮朝) from 1802 to 1945. Hue cuisine has specificity of imperial cuisine. That's a reason why Hue has a lot of wonderful and delicious dishes. It is not impossible to not mention steamed cakes when we consider Hue cuisine, and "Banh bot loc" is one of the best cake speciaties in Hue.

It is a savory cake made from タピオカ粉, tapioca flour. The dough is made by kneading flour with boiled water. Inside of the cake, there are shrimp and pork which are minced and stir-fried. After wrapping shrimp and pork in dough, cake will be steamed and crust of the cake will become transparent, it's a feature of this cake. We serve "banh bot loc" with sweet and sour fish sauce and green onion.
Why people love "banh bot loc" ? Because it's slightly tough and tasty with topioca crust, shrimp and pork, and fish sauce makes it more tasty with sweet and sour taste.
You can find "banh bot loc" everywhere in Hue or Saigon, from street vendor, common food store or luxury restaurant. As I tell you above, Hue food is affect by imperial features, so that do not surprising when you can find a better dish of "banh bot loc" in small store than in a restaurant in Hue, because they have same imperial quality. So that, I would like to suggest you to try it from small food store when you visit there.

It's very delicious. You can try in "Mon Hue" restaurant, especially try it in Hoi An (ホイアン) or Hue (フエ)
